Have Yourself a Globally Inspired Christmas at Tramsheds

    25 December 2018,

Hop between Italy, Argentina, Greece, France and more at Tramsheds this Christmas thanks to the huge array of globally inspired restaurants housed under one roof.

Clockwise left to right: Baguette by Dust Bakery, spaghetti vongole by Flour Eggs Water, cannoli by Dust, Supamart’s Greek salad, capotana with goat’s cheese crostini by Garcon, whole fish with fennel salad by Bodega 1904.

Every Christmas, the Maiale family behind Flour Eggs Water pays homage to their Italian roots and celebrates with a buttery, herb-flecked bowl of spaghetti vongole – a tradition upheld each and every year. All pasta at Flour Eggs Water is handmade, and their spaghetti is no different, lending itself to a perfectly al dente texture.

Next, soft and supple prosciutto, crowned with a ball of milky mozzarella.

Over at Bodega 1904, whole fish are cooked over charcoal just like it’s done in Argentina, the grill leaving a smoky, charred skin, which soaks up a squeeze of fresh lemon. At the centre of the table, the fish is a sight to behold, matched with green tomato pickles and a textural salad of crisp shaved fennel, salted chilli and bitter radicchio to cut through the richness.

Juicy red tomatoes, crunchy cucumber, olives and salty feta combine in Supamart’s classic Greek salad – a staple at every Karellas family Christmas celebration – tossed right before serving to remain vibrant. Next, we have chef Brian Villahermosa of Garçon’s Sicilian-inspired caponata – an unctuous vegetarian dish of sweet and sour eggplants, onions, pine nuts and big green olives served with goat’s cheese crostini.

Also hailing from sunny Sicily are Dust bakery’s expert cannoli – crunchy golden pastries made from Dust’s own stone-ground flour filled with a sweet whipped ricotta, garnished with candied orange and chopped pistachio nuts.

Top up your glass with an organic Argentinean rosé from Bodega Chacra Mainque in Patagonia, off the shelves of Bodega 1904’s very own in-house wine store and you’ll be on your way to a holiday, on your plate anyway.
